Homemade mac and cheese is the best way to make mac and cheese. When you make it as a casserole, it gets even better. It’s so cheesy and creamy and that top layer of cheese gets super crispy. That combination of crispy cheese and gooey cheesy noodles is so good!

I don’t think it can get any more Texan than this, and I’m concerned I’ve let my fellow Texans down for never trying this before. I’ve had brisket tacos before, but brisket enchiladas are a different story! We may have to try these out! I’ve got the brisket down, but I need to work on my enchiladas.

This is one of those recipes that I don’t set out to make on the first try, but when I find it I’m stopped in my tracks until I make a grocery list and head off to the store for dinner groceries!
