Tex Mex is one of those regional foods that knocks it out of the park. In Texas anyway, Tex Mex is a way of life. Bold flavors, creamy sauces, crispy chips, warm and delicious tortillas – sometimes all wrapped up together – you’ve got your self a good time. Friends can gather around a table and eat for hours as long as the chips and queso is in steady supply.
One of the things I love about Tex Mex, is it’s versatility. To be able to take brisket and turn it in to carne guisada, is a beautiful thing.

Every year, between August and September, our local Texas grocer HEB, celebrates Hatch Green Chile Month! It’s a pretty special thing for us to be able to go buy roasted hatch chiles fresh from the store. They make incredible enchiladas. The only thing they missed here is the abundance of sour cream.

I’ve had, and enjoyed, fish tacos. If you haven’t had them, let me walk you through it. Fried fish, slaw, and sauce, wrapped in a tortilla. Now, add cheese and melt it over some chips to make fish nachos. Why didn’t I think about this before?
